Eight axes: spice (aroma vs. heat), umami (broth vs. fermentation), aroma notes (floral / herbal / caramel), texture (springy / tender / crisp / glutinous), spice palette, breakfast grain, ritual (shared table / plating / slow dining), and curiosity.
